I do think that political correctness has gone too far, but only because that opened the door to it being made fun of. Trying to make the world less harsh is a good thing, I think. Don't forget - 100 years ago we also practiced legally enforced segregation, women still couldn't own property in some states, and men could be sent to prison for being gay. We evolve and our awareness of language should too.
You're points about classicism are interesting, I see the same thing - don't know why, worth thinking about though. I think there's also a lot of classicism going on when people tell other groups they 'shouldn't' object to a word or phrase. The implication being that the majority will do what it wants and the minority should stop being annoying about it.
