So why is it called a spork and not a foon?

Because the word "foon" doesn't have clear, unique sounds identifying both a fork and a spoon. The f and n are not the more important parts of those words in terms of recognition. "spo" and "ork" are enough to bring the words spoon and fork to mind, but "fo" and "on" are not.
